Domaine Chevallier
This small producer of hand-crafted wines is very much a family run affair with daughter Celine Courty-Chevallier and her brother Tommy Chevallier running the business leaving their father Claude to oversee the vineyards and wine making.
The wider Chevallier family have been farming and grape growing in the Courgis region of Chablis since 1788.
In 1986, Claude Chevallier, who has a passion for the wines of Chablis, revived the family tradition of wine making and established Domaine Chevallier. Wine making and cellar door are located in the small village of Montallery – tucked into the hills between Courgis and Beines. The Estate covers just thirteen hectares, across three appellations. Four hectares in Petit Chablis, nine hectares in Chablis and 0.3 hectares in Chablis 1er Cru.
A traditional approach to vinification is practiced with the Petit Chablis and Chablis fermented in stainless steel tanks and the Chablis 1per Cru, fermented in oak barrels. The aim is to make crisp, classically styled Chablis wines, which highlight the distinct terroir of the region.
